Ingredients:
Instructions:
1) Cut the Kunfa dough into small pieces
2) Melt the butter
3) In a bowl add the Kunfa and the melted butter
4) Mix together with your hands so that the kunafa is nicely combined with the butter
5) Grease the muffin tin with butter
6) Add the Kunafa bit by bit into the muffin holes
7) Press down with a glass so that its even
8) Bake for 5 mins in a preheated oven at 180 Degrees
9) Add Ricotta cheese
10) Then cover again with more Kunafa pressing the sides ensuring that the cheese sits nicely in the middle
11) Bake for another 15 mins at 180 Degrees
Syrup:
1) Add water into a pan and then add the sugar
2) Bring to boil and then add the lemon juice and a pinch of saffron
3) Keep stirring for another couple of minutes
4) Once done, let it cool for a while and then drizzle on top of each of the mini Kunafa.
5) Let the Kunafa absorb the syrup for at least an hour.
