Coconut Macaroons

Ingredients:

  • 1 1/4 Cups Shredded Coconut
  • 1 Large Egg White
  • 1 Tsp Vanilla Extract
  • 1/4 Tsp Salt
  • 1/4 Cup Honey
  • 1/4 Cup Roughly chopped dark chocolate

Instructions:

1) In a medium bowl, whisk the egg white until it barely starts to turn frothy.

2) Whisk in the vanilla extract and salt

3) Stir in the honey and shredded coconut.

4) Use an ice cream scoop and drop the mounds of the coconut mixture onto the baking sheet. Use your fingers to form a more rounded shape.

5) Bake at 180 degrees for 20 minutes.

6) Cool the macaroons completely.

7) In the meantime, melt the dark chocolate in the microwave until fully melted.

8) Dip one macaroon side at a time gently.

9) Refrigerate for 15 mins so that the chocolate sets.
